Embark on a journey of discovery with this comprehensive Low Acid / Pressure Canning Class, tailored for both novices and seasoned canners. This class offers a deep dive into the safe and effective preservation of low-acid foods such as vegetables, meats, and certain seafood, focusing on the vital science and safety behind pressure canning for these food types.
Led by UC Master Food Preservers, Deanna and Liz, you'll explore the essentials of pressure canning, understanding how temperature and pressure play a crucial role in preventing foodborne illnesses. Learn the art of selecting the right ingredients, preparing and packing jars, and managing a safe canning environment.
This interactive workshop not only provides hands-on canning experiences but also ensures each participant takes home a tangible reward for their efforts. You'll have the chance to prepare and can your own foods, and at the end of the class, take home 1 quart and 1 pint of the foods you've personally prepared. The types of foods for canning will be determined prior to the class, based on the availability of fresh, seasonal ingredients, ensuring the best quality for your preserves.
With a blend of practical experience and creative exploration, we’ll guide you through various recipes and techniques, allowing you to infuse your personal flair into each jar. Upon completing the course, you'll have the opportunity to build confidence and skill to safely can low-acid foods at home, creating high-quality preserves that are as delightful to taste as they are satisfying to prepare. This class is perfect for those looking to utilize their garden harvest creatively, create unique homemade gifts, or enjoy home-canned goods throughout the year. There will be 3 types of tickets availble for this event:
- General Admission - $35: This ticket is open to the general public and offers a full participation experience in the hands-on activities of the class. Ticket holders will have the opportunity to engage in every step of the pressure canning process and take home the seasonal food they have prepared themselves.
- Discounted Rate for Students and Members - $15: Students and members are eligible for a reduced rate. This ticket allows them to enjoy the same benefits as the general admission, including full participation in the hands-on canning activities and the chance to take home their self-prepared canned goods.
- Free Observation Ticket: This ticket is available at no cost and is ideal for those who wish to attend the class as observers. While this ticket does not include participation in the hands-on activities, it allows attendees to learn by watching the canning process, providing valuable insights into pressure canning techniques and practices.
Please Note: The class will take place outdoors. Please make certain you dress in layers. This is a large working garden, please wear clothing that could potentially get wet or dirty. Please wear non-slip closed toed shoes. We are a zero-waste space, so please leave no trace. We have a water refill station for your convenience, please bring a water bottle.
Our garden is located adjacent to Parking Lot 2c on SDSU campus. There is no free parking on SDSU Campus. To ensure that you are not ticketed, please take an alternate form of transportation, such as the trolly or MTS. Or, find free street parking. Daily and hourly SDSU Visitor Parking permits may be purchased via this link.
