About the event

Embark on a journey of discovery with this comprehensive Low Acid / Pressure Canning Class, tailored for both novices and seasoned canners. This class offers a deep dive into the safe and effective preservation of low-acid foods such as vegetables, meats, and certain seafood, focusing on the vital science and safety behind pressure canning for these food types.

Led by UC Master Food Preservers, Deanna and Liz, you'll explore the essentials of pressure canning, understanding how temperature and pressure play a crucial role in preventing foodborne illnesses. Learn the art of selecting the right ingredients, preparing and packing jars, and managing a safe canning environment.

This interactive workshop not only provides hands-on canning experiences but also ensures each participant takes home a tangible reward for their efforts. You'll have the chance to prepare and can your own foods, and at the end of the class, take home 1 quart and 1 pint of the foods you've personally prepared. The types of foods for canning will be determined prior to the class, based on the availability of fresh, seasonal ingredients, ensuring the best quality for your preserves.

With a blend of practical experience and creative exploration, we’ll guide you through various recipes and techniques, allowing you to infuse your personal flair into each jar. Upon completing the course, you'll have the opportunity to build confidence and skill to safely can low-acid foods at home, creating high-quality preserves that are as delightful to taste as they are satisfying to prepare. This class is perfect for those looking to utilize their garden harvest creatively, create unique homemade gifts, or enjoy home-canned goods throughout the year. Join us for this informative, enjoyable, and rewarding experience in the world of low acid / pressure canning!
